  1. In a large bowl, pour out the dry ingredients first, that is, the coconut flour, pysillium husk and spices and mix well.
  2. Once satisfied, add the ghee into the dry ingredients and try to incorporate it as much as possible.
  3. The next step is to add the hot water, 1 cup at a time, forming a dough mixture.
  4. Knead this mixture and roll it into a log shape and then divide it into equal sections.
  5. Thereafter, take individual sections roll them out evenly on parchment paper and use a circular container or bowl to cut out the shapes.
  6. Finally in a hot pan, grease the pan with a little bit of ghee (roughly 1/4 a Tbs) and fry the tortilla until golden brown on one side, flip it and brown the other side. Note: To make the Keto Quesadillas, Begin with Step 6. As the other side is browning, top the tortilla with your preferred cheese and keto meat filling, then, cover the filling with a ready made tortilla.
Recipe Notes

Once you are in the middle of a Keto diet or if you have chosen to be true to the Keto way of life, there is nothing as torturous as dealing with exotic food cravings! This happens to me a lot and I had to find a way to "keto convert" my favorite dishes!

On this particular day, I had a life or death situation type craving for mexican food and I was strongly considering having a cheat day. Cheat days are not the enemy of progress per se, but for me, they eventually lead to cheat weekends or cheat weeks. All in all, cheat days was not an Option!

I ended up pulling up my big girl pants, invoking my inner chef and creating this delicious master piece in th kitchen! Trust me on this!

My choice filling was a Keto Mexican Style Pork Stirfry, but the possibilities are limitless! Options would vary from beef, chicken, fish, lamb et cetera.
