In a mixing bowl, combine the coconut flour, almond flour, baking powder, sweetener and baking soda. Whisk to incorporate thoroughly
In a seperate bowl, whisk the vanilla extract and the eggs
Pour the egg mixture into the dry ingredients and knead into a dough
With your hands, form 6 balls and place them on a baking tray lined with parchment paper
Bake for 15 minutes, ensuring to rotate the tray twice during this time
Set aside to cool as you prepare the berry jam
Homemade Keto friendly Blueberry Raspberry Jam
Combine the berries and rinse with 2 tbs of vinegar to 100ml water to remove impurities
Place berries in a saucepan with low heat and mash them with a potato masher
Once you have released the berry juices add the sweetener and simmer whilst stiring to reduce excess liquid
Take the jam off the heat when you are satisfied with the conistency and set aside to cool
So I was having an insane, random and out of the blue need for a four o'clock tea time the other day. I had just stocked up on my earl greys and I needed a keto friendly snack that would work well with the theme tea party that had already taken shape in my head.
This keto english scones were the end results. Honestly, the texture is something that needs getting used to. Also, the chemical reaction of the pastry turning green because of the blueberry and baking soda reacting freaked me out...I had to google the phenomenon!
In my opinion, this recipe needs a bit of more tweaking, I'd love to turn it into a more savoury with bacon bits, which I will and update you guys about it!
The jam was a delight though! I see a future where it will be used to make keto friendly cocktails!
